Test Kitchen Supervisor
 

The Test Kitchen Supervisor is r
esponsible for maintaining the Test Kitchen at a high standard of cleanliness, maintain fully functioning equipment, stock all necessary food products to research, creating and presenting new menu items. Maintain an organized facility, prep items (according to recipe) needed according to product requests within the department and for Train the Trainer, photo shoots, vendor meetings and board presentations. Cook products at cuttings and presentations, log all samples in computer log. Assist with Form #100 procedures and Q.A. presentations.
 
Responsibilities:
  • Maintain high level of cleanliness of equipment, counters, walls, shelving, floors, utensils, inserts, etc. (hands-on)  
  • Log all incoming samples with as much detail as possible for future reference.
  • Maintain stock levels of frequently used ingredients, in addition to products requested by FBI or Q/A, to create and present new products, cuttings etc. Discard unwanted vendor samples after 60 days or product expiration.
  • Maintain stock levels and purchase any frequently used produce or other ingredients from local grocery store that are un-available from IHOP distributor.
  • Prep needed products used to create and present new products.
  • Review Test Kitchen calendar to plan ahead for needed products and prep along with kitchen setup for presentations.
  • Cook food for food presentations and group functions.
  • Maintain Budget for Test Kitchen by managing costs of products and services used.
  • Assist Q.A. in prepping and presenting culinary reviews.
  • Prep and organize Test Kitchen for training videos, Train the Trainer classes, board, vendor and NPC presentations.
  • Assist other departments as needed such as photo shoots for OPS and training, product for Human Resources-QUM meetings.
  • This position requires the same physical demands of a restaurant employee which includes long periods of standing. 


Qualifications:
  • Minimum 2 years hands-on kitchen management and culinary experience in a restaurant production environment 
  • Must have knowledge of food cost management and have experience working with budgets 
  • Self starter and have strong organizational skills; multi-task and have experience coordinating with multiple departments to meet and support their priorities 
  • Excellent communication skills-both written and verbal and be able to build good relationships with distributors, vendors and colleagues 
  • Strong knowledge of MS Word and Excel
  • Experience with the process of organizing Food lists and purveyor products for off-site photo shoots and commercials; coordinate gifting of excess food vendor production samples to LA food bank when possible
  • Travel if needed
